Tightly cover pan, reduce heat to medium-low and cook for 20 minutes. Spoon tomatoes over pork season with remaining 1/2 teaspoon each salt and pepper. In the same skillet, cook the onions and mushrooms until soft and caramelized, then season with Italian seasoning, red pepper flakes, minced garlic, salt, and pepper. Add pork back to pan top each pork chop with 2 tablespoons uncooked rice. Sear the pork chops until golden brown, approximately 3-4 minutes on each side.When hot, add peppers and sauté until tender, about 10 minutes remove and set aside. Add pork chops to the pan, and cook for 3-4 minutes on each side until browned. ![]() Add 2 Tbls vegetable oil to the hot skillet.
